Carob rice treats.

 

100g brown sugar

100g butter

1 egg, beaten

1 tspn vanilla essence

225g brown rice flour

1 tblspn cocoa or carob powder

100g white or milk chocolate or carob roughly chopped

200g carob buttons chopped may be substituted for both chocolates

 

method

 

Cream butter and sugar together until light and fluffy. Beat in egg and vanilla.

 

Sift flour and cocoa and stir into mixture with chocolates or carob until well combined.

 

Drop dessert spoonfuls of mixture onto lightly greased baking sheets. Press top lightly with the back of a floured fork. Bake in 180 C (conventional oven) oven for approximately 15 minutes or until golden brown.

 

Cool on trays for five minutes and then place on a wire rack to completely cool.
